These are soft, puffy Italian cookies
6 eggs
1 cup sugar
1 stick unsalted butter, melted and cooled
1 tsp extract [vanilla, lemon, anise or almond]
4.5 cups sifted flour
8 tsps baking powder
1. cream together eggs and sugar until light
2. add butter and flavouring
3. add dry ingredients
4. dough will be sticky. drop by rounded spoonfuls onto a
greased cookie sheet and bake in a pre-heated 325 degree
oven until they are puffy.
5. glaze with a mixture of confectioner's sugar and milk [or
orange juice]
