Herb Crusted Salmon

Salmon Fillets, four about 125 grams each
Fresh Basil, a cup
Parsley, a cup
Fresh Dill, four tablespoons
Garlic, four cloves
Black Pepper, one teaspoon
Olive Oil
Sea Salt, one quarter teaspoon
Preheated oven 350F

  1. Place the basil, parsley, dill and garlic in a processor and pulse five times per pulse.
  2. Add one tablespoon olive oil to the herb mixture. Remove mixture from the bowl.
  3. Salt and pepper the salmon.
  4. Add another tablespoon of the olive oil to a saute pan. Add the salmon skin side up over medium-high heat. Sear for two minutes then turn over and sear for another two minutes.
  5. Remove the salmon form the pan and place skin side down in a baking dish. Having separated the herb mixture into four equal parts which you will place on top of each fillet.
  6. Bake for eight to ten minutes.
