Pasta Dolce (Sweet Maccheroni)

3 tbsps virgin Olive Oil
1 large onion, chopped
2 cloves Garlic, minced
500 gr ground Veal [or Turkey, or cooked chick peas]
500 gr chopped, blanched tomatoes, peeled [or one 16 oz. can of imported tomatoes -- sometimes preferred]
salt to taste [1 1/2 tsps]
black pepper to taste
500 gr ricotta [made smooth -- pushed through a sieve]
3 tbsps honey [or pure maple syrup and lemon juice]
500 gr pasta [fusilli, farfalle, penne]
[cayenne pepper or ground red pepper added to taste makes it interesting]

1. Saute the onion in the oil for about ten minutes.
2. Add garlic, saute until aromatic.
3. Add meat or chick peas, stir frequently; if meat, cook until browned.
4. Add the tomatoes, salt and pepper.
5. Cook over low heat for 45 minutes.
6. At this point you may want to add a touch of anise or the abovementioned red pepper.
7. Finally add the ricotta and honey [or maple syrup] and then toss with cooked pasta.

[hint: sometimes helps to mix in the water from cooking the pasta into the ricotta to make it more workable]
