Baker's Frosting
1/2 cup vegetable shortening
1tbsp unsalted butter
1/2 tsp salt
2 tbsps milk
2 tbsps flour
2 tsps vanilla extract [or be creative]
1 egg white, foamy
1 cup confectioners' sugar
2 to 3 tbsps cocoa [optional]
1. blend butter and shortening, beat to blend
2. beat in salt, milk, flour and flavouring one at a time
3. Beat egg white until foamy, not stiff and then combine with
first mixture
4. gradually beat in enough confectioner's sugar to make the
right consistency for frosting a cake.
Creamy Cocoa Frosting
8 ounces softened cream cheese
1 tsp vanilla
dash of salt
5 cups sifted confectioner's sugar
1/2 cup cocoa
2 tbsps milk
1. combine cream cheese, vanilla and salt until well blended
2. combined sugar and cocoa alternately with milk; beating
until light and fluffy.

Basic Butter Cream
1 stick/1/2 cup unsalted butter
1 egg yolk
1 lb confectioner's sugar
3 tbsps milk
1 tsp vanilla
1. beat butter with egg yolk in medium bowl until soft
2. beat sugar in alternately with milk and vanilla until
spreadable
Lemon or Orange Butter Cream: Omit vanilla, add 2 tsps grated lemon or orange rind and substitute 3 tbsps of the appropriate juice for the milk.
Mocha Butter Cream: Omit milk and vanilla and substitute 3 tbsps coffee in its liquid form
